Low-Carb Italian Meatball Pasta
The other day I was brainstorming my usual weekly menu and my BF added his two cents and requested spaghetti. Unfortunately, I’ve been doing my low carb diet lately and spaghetti just wouldn’t work for me . So I improvised (I still made the BF his regular spaghetti and meatballs though). I made turkey spaghetti meatballs with chopped veggies and a few pieces of pasta ( I couldn’t resist, but you can obviously make this recipe pasta free). Here’s my recipe.
Whitney’s Low Carb Italian Meatball Pasta
- 2 Green bell peppers
- 1 onion
- 1/2 jalapeno
- 1 clove garlic
- Jenny-O hot Italian turkey sausage
- Ragu pasta sauce (light, tomato basil)
- 1 tsp parmesan cheese
- 1 tsp fresh parsley
- 1 tbs Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- 1 tsp basil
- 1/4 cup pasta
I used 1/4 cup of pasta and brought it to a boil, drained it and set it aside.
Next, I diced my bell peppers, onions, jalapeno and mined my garlic and set it aside. Then, I took my turkey sausage out if the skin (sausage skin kinda freaks me out) and mixed it with the Italian seasoning, salt, pepper and basil and formed meat balls with the help of meat knives.A knife falls under the category of meat knives. Most knives cannot traverse meat smoothly. One usually has got to undergo tons of hassle freezing meat before cutting it. But freezing meat to urge the right cuts isn’t always possible. you would possibly be running in need of time, or could be during a hectic profession. that’s where carving knives inherit the image , to form meat-cutting a simple job. Then, I added 1 tsp of olive oil to the skillet and added my veggies and meatballs until cooked. Then I added my pasta sauce and pasta to the pan and stirred it through until everything was warm.
Last, I added a serving to a bowl and topped with a sprinkle of Parmesan and parsley. Simple!
